Rainbow Fruit Plate:
Ingredients:
- Strawberries
- Oranges
- Kiwi
- Blueberries
- Bananas
- Pineapple
Instructions:
- Wash and dry all produce.
- Slice all your fruits into bite-sized pieces.
- Arrange the strawberries, oranges, kiwi, and blueberries on a plate in a rainbow shape.
- Put your bananas in dishes at the bottom of your rainbow for the clouds, and arrange the pineapple in the middle for the gold at the bottom of the rainbow.
Tip: Try replacing your banana clouds with Greek yogurt for some added protein, and add honey to your yogurt for additional sweetness.
St. Patrick’s Day Clover Kebabs:
Ingredients:
- Assorted green vegetables (broccoli, cucumber, snow peas, asparagus, zucchini)
- Green peppers (for making shamrocks)
- Wooden skewers
- Small cookie cutters (shamrock or other shapes)
Instructions:
- Wash and dry all produce.
- Remove stems and seeds from green pepper. Trim broccoli into small florets, peel cucumber and zucchini if desired.
- Using a clover-shaped cookie cutter, cut out pieces of your green pepper to top your skewers.
If you don’t have a cookie cutter available, here’s another option: Cut your green peppers horizontally into “rings” and the shape should resemble a clover. - Cut your remaining vegetables into bite-size pieces.
- Stack your assorted vegetables on the skewers and top them with your clover toppers.
- Mix up this cucumber-dill dip for the perfect side!
Tip: Use cucumber instead of green pepper for your clover to adapt to your child’s taste preferences.
Kid-Approved Sweet Green Smoothie:
Ingredients:
- 1 banana
- 2 handfuls of spinach
- 1 cup orange juice
- 1 cup frozen mango
Instructions:
- Mix the 4 ingredients together in a blender. Pour and enjoy!

Shamrock Quesadillas:
Ingredients:
- Green spinach tortillas
- Black beans
- Cooked chicken, tofu, or eggs
- Assorted green veggies (green bell pepper, spinach, lettuce, or kale)
- Preferred kind of cheese (Monterey Jack, cheddar, mozzarella, etc.)
Instructions:
- Add cheese, veggies, protein, and beans to the top of a tortilla.
- Top the tortilla with a second tortilla.
- Place the quesadilla on a skillet for about a minute per side or until the cheese is melted.
Tip: For even more green, serve quesadilla with salsa verde!
